Passionate Pizzaiolo Vito Iacopelli hails from the Italian city where they make mozzarella, so it’s even more impressive that he specs REAL California mozzarella for his pizza restaurant in Los Angeles. His innovative appetizer, the “Mo-Pizza” is a pie made entirely from quality California cheese, olive oil, spices and toppings such as roasted vegetables and prosciutto. He cuts the fresh mozzarella into little parts and adds boiling water, melting it slightly so that he can first pull it to make it smooth and then press it into a puck, which he then forms into a pizza shape. The Mo-Pizza is served cold, so once the pizza shape is formed, Chef Vito dips the cheese in cold water to stop the cooking before he adds the toppings.
