Prosciutto & Arugula Salad Pizza

Ingredients
- One 12-inch pizza shell
- 2 tablespoons extra-virgin olive oil
- 4 ounces smoked mozzarella (provola) or fresh mozzarella, thinly sliced
- 1 cup clean arugula
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
- 3 ounces thinly-sliced prosciutto cut into strips
Instructions
- Brush the pizza crust with olive oil.
- Arrange the mozzarella over the crust, leaving a ½-inch border.
- Bake. (This is the prep, and it can be done up to 2 hrs. ahead and held.)
- To order, toss the arugula with the olive oil, vinegar, salt and pepper.
- Cut the pizza into 4 triangles.
- Plate the pizza slices.
- Spread the arugula over the cut pizza shell.
- Arrange the prosciutto over the arugula.
- Serve.
